The Best Damn Thing I Ate In Central Texas: Papa Jazzy’s Crawfish
It all started with a phone call from my good friend Torpedo Jones. He called me recently and stated that Papa Jazzy, who if you don't know, is one of the best (if not THE BEST) cajun chefs in this area and has one of the best cajun food trucks in Central Texas, had hot and boiled crawfish for sale and he would be more than happy to deliver it to my home. I only had one reply: "SHUT UP AND TAKE MY MONEY!".
Being that I'm originally from Louisiana, its rare that I can find crawfish to my liking. I have strict criteria when it comes to my crawfish: It has to be SPICY, and it has to be so spicy that it makes me either sweat or opens up my sinuses causing my nose run (I know that's weird). So far since I've lived in Texas, I've been unsuccessful in finding crawfish that meet BOTH of those standards, its usually one or the other. But Papa's is definitely ON POINT.
So imagine my happiness when he pulled into my driveway with several pounds of those delicious mudbugs in the back! The crawfish were so delicious and perfect, we found ourselves picking through the remnants of the shells in the hopes of finding leftovers! Papa Jazzy stated to me that he would be selling crawfish on select weekends and when its available so if you get wind that he has them, don't hesitate to pick up a few pounds!
